Season 1 was all about meeting the characters, and the land of ooo, season 2 was about character devolpment, and letting the show have it's own voice. Season 3 should be able to tie all the good stuff together, and focus on story. What happened during the mushroom war? Are there any humans? Are you a Marceline and Finn type of guy, or a Princess Bubblegum and Finn type of dude?
